February Week 2 Produce

Good week Coopers! Its GORGEOUS outside, and what goes better with faux-spring weather than REAL FRESH PRODUCE? So while you are taking some air on the way to the coop, consider some of these suggestions starring Tuesday’s produce:

Kale, Lacinata and Green (Recipe of the week! Roasted Kale)

Green Leaf Lettuce (Can be used as the wrapper for a totally green spring roll–fill with our carrots, avocados, beets and wahini rice for dipping in an orange-soy sauce with some crushed peanuts)

Cortland Apples (Their crisp sweetness compliment today’s weather perfectly. Enjoy in a park)

Mutsu Apples (My friend swears by homemade green apple apple sauce and olive-oil sauteed red cabbage as a tasty meal….maybe Veselka can supply you with some sweet potato Pierogis for a complete meal)

Tangello Oranges (last week! Try using its juice in an orange-based citrus balsamic vinegarette)

Red Peppers (Roasted, seared, or raw, their a steal this week)

Parsley (How about a parsley pesto over your red peppers? Or veggie pasta–we have that in bulk too!)
