No cook ideas to keep the heat out of the kitchen

Apparently it’s over 100 degrees! If you aren’t sequestered in AC all day, then your appetite will probably be lower than normal. When hunger pangs do hit, here are some no-cook ideas to keep the kitchen cooler:

  • Obviously, eat plenty of raw fruit and veggies. Incorporate them into salads and smoothies.
  • Peanut butter and jelly sandwich (with bread made in someone else’s oven).
  • tabouli with bulgur (aka cracked wheat), recipe below
  • massaged kale salad

Traditional Tabouli

  • 1 cup bulgur wheat
  • 2 cups cold water
  • 1 bunch parsley
  • 1-2 diced tomatos
  • 1 diced cucumber
  • juice of one lemon
  • olive oil, salt, and pepper to taste

Soak the bulgur in the cold water until absorbed (an hour? I’m not sure, went out to watch World Cup). Chop the parsley very finely and dice the tomatoes and cucumber quite small. Mix everything together, and store in refrigerator until serving (best to let it sit at least a couple of hours before eating). Adjust seasonings before serving.

Alternate idea since we got in so much basil this week: drop the parsley and lemon and mix the other ingredients with homemade basil or other herb pesto.
