WEST AFRICAN PEANUT SOUP - VEGAN / GLUTEN-FREE ingredients: 1 sweet potato - cubed 1 red onion - diced 3 cloves garlic – minced 4 tbsp tomato paste 1 tbsp fresh ginger – grated 1 jalapeno pepper- minced ½ c peanut butter kale or collard greens, de-stemmed and thinly sliced chopped peanuts for garnish cilantro for garnish (optional) 1 veg bouillon cube 1 tbsp coconut oil salt
Nearly all ingredients can be purchased at the co-op.
Sautée onion, garlic, pepper, and ginger in coconut oil over medium heat. Add bouillon, sweet potato, and 3-4 cups water. Whisk in peanut butter and tomato paste. Stir in sliced greens; salt to taste. Garnish with peanuts and cilantro optional. Enjoy!
